Yes, it is true that vegetable nutrition is based on color. The darker the vegetable, the healthier it is for you.

Vegetables are categorized by nutrient content with the darker vegetables having the highest nutrients.

Chlorophyll is what makes a plant green. The more Chlorophyll, the greener (or dark the color) the plant.

Healthy nutrition is definitely promoted in the vegetable group. Most vegetables are naturally low in fat and calories and have no cholesterol.

Vegetables have many edible parts (roots, stems, leaves, and flowers) and can be eaten raw, cooked, fresh, frozen, canned, dried/ dehydrated, whole, cut, or mashed.
